Mifa has dubbed me the baking monster. Ever since I discovered the magic that can be created in an oven a month ago, I haven’t been able to stop baking since. It has cumulated to a point where I actually bought 6 bars of Lindt chocolate (disclaimer: they were on sale, 3 in a pack, buy 1 get 1 free) in case I want to bake some real good chocolate-anythings.
I keep seeing the world (aka, the supermarket) in terms of things I can bake and cannot bake. I walk down the biscuits/cookies aisle and think what would make a good cheesecake/lemon tart crust? I go to Ikea and am immediately drawn to kitchen utensils. I spent $13 on a silicon baking sheet today from Cold Storage (I’m so sure I could’ve gotten it cheaper elsewhere) which turned out to be the best decision I’ve made in my baking adventures so far.
(Since I cannot yet own $x,xxx+++ KitchenAid appliances or at least dream of a Kenwood mixer or food processor. Getting a new oven is also out of the question.)

It has seriously done wonders with the three things I baked today (yes I baked 3 items, yes I’m still sane). I don’t have to worry about the bottoms burning (sounds wrong, burning bottoms…) because the mat regulates the heat much better than use-and-throw cookie sheets! I could happily leave my chocolate mint meringue cookies to bake and not worry about turning it into carbon even before the upper surfaces could solidify. And everything I baked today just turned out beautifully (in terms of taste, I can’t say looks for reasons you will find out not so very much further down in this entry).
So coming back to the baking! Out of the 3 things I baked today only 1 was new. The green tea cookies were for the bf (and KJ’s gf), but they required only yolks (as previously mentioned), and as I already had 2 whites in the fridge waiting, I had to do a whites based recipe to even out my ingredients. Was tempted to try out a particular cake but it was too much of a hassle. Ended up going back to my meringue recipe which was decidedly, the easiest way out when left with far too many egg whites.
Contrary to popular belief, meringue is actually easy to make. *le gasp* And to date is one of the cleanest and most hassle-free way to get rid of the whites. But I was seriously sick of the chocolate chip meringue flavour, so I thought I’ll try something different since I had peppermint extract, and made chocolate mint meringue cookies instead.
They turned out FANTASTIC. BEST. MERINGUES. I’ve made. Ever. Way better than the first two attempts. The texture came out perfect this time. The right amount of melt-in-your-mouth taste with soft, gooey insides without the uncomfortable sticky-chewy taste that the previous attempts yielded. I credit this (almost) entirely to my new silicon baking sheet.
(Although the consistency of 1 day old egg white may also, just possibly, have contributed to my success.)

Why am I brown?
And also my scary banana loaf. Basically, I finished my cookies around 5 so I thought I’ll have time to whip up some banana bread because the recipe looked fairly simple. As with all experimental baking, Lizzy, of course, failed to understand how much bread would actually RISE and filled her loaf tray to the brim, hence causing a massing pulsing volcano to burp, belch and overflow in her oven.

So whatever overflowed likewise turned into bread, which I consumed while trying to clear it up as much as possible (quite a futile attempt since it bubbled and spilled over for most of its time in the oven). And this bread, is superbly. NICE.
It was another one of those well-heralded recipes and it turned out really yummy! Even Sis, my biggest and nastiest critique, said so.

Whenever something I bake passes the Sister test then I know it’s good. Because she never minces her words and has, to date, hardly liked anything I’ve baked (except the green tea cookies which she really loves, and she is also now a fan of the banana bread and chocolate mint meringues).
So yes, very happy because baking today was a great success. *satisfied*
In other, random news… when I stepped into my house after coming back from Cold Storage earlier I noticed this:

I suppose Dad’s feeling all patriotic again this year. It was just really funny because when I was younger, we used to put up the big flag (landed, so ours is like, on a pole) and attached it to the fence that used to separate us from our neighbours. Unfortunately, several neighbours have come and gone since then and said fence has now become a wall, and we have nowhere to hang out flag nor do we actually bother to do so anymore. In fact, current (and newest) neighbours have built up so many walls (figuratively and literally) that I can barely see the house anymore.
When did National Day stop meaning anything to me? When we, as a family, stopped watching the parades together? When Sis and I grew up and started having our own National Day activities with friends?
Hmm.
We’ve been in the water so long we don’t even know we’re wet.
